Texas-Style Brisket

This brisket is wonderful alone or served with soft tortillas and taco toppings.

Ingredients:

  • One 10 to 12 lb (4.5 to 5.5 kg) whole packer brisket (Choice or higher)

Instructions:

  • Trim the excess fat and silver skin from the brisket. Also, remove any “hard” pieces of fat as they will not render off during the cooking process. Trim the fat off the bottom of the brisket leaving only ¼ in (6 mm) fat. Apply rub to all sides of the meat liberally … I mean liberally! Cover the brisket and place in the refrigerator to marinate overnight.
  • Mix the rub ingredients (listed below) in a large bowl. This mix will make more than you need for one brisket; store the remainder in an airtight container.
  • Set your EGG for indirect cooking with the convEGGtor at 250°F/121°C.
  • Place the brisket on the grid, fat-side down – this is my preference, but highly debated in the barbecue world. Fat-side up is fine if that is your preference, but fat down is what many competitors do as it gives you a much better presentation. When the meat reaches an internal temperature of 160°F/71°C, double wrap the brisket in non-waxed butcher paper or aluminum foil – this is what we call the Texas crutch. The bark will have formed nicely by this point.
  • Continue to smoke the brisket until the meat is “probe tender,” which means when you probe it there is no resistance … think of a toothpick in a cake. Each piece of meat is different but this will likely be at an internal temperature of between 200-202°F/93-94°C. Remove the brisket from the EGG, wrap in a towel and place in a cooler for at least one hour. This will allow the juices to re-distribute in the meat. Unwrap the brisket and slice against the grain.

Brisket Rub Ingredients

  • 1 cup (240 ml) coarsely ground pepper
  • 1 cup (240 ml) non-iodized salt
  • ¼ cup (60 ml) granulated garlic
  • ¼ cup (60 ml) onion powder
  • ¼ cup (60 ml) paprika

Ingredients:

  • One 7 to 8 pound pork butt, fat cap trimmed off
  • 2 tablespoons vegetable oil
  • Big Time BBQ Rub (Recipe below)
  • ½ cup apple juice
  • 2 cups Dr. BBQ’s Carolina Barbecue sauce (Recipe below)
  • 12 hamburger buns

Instructions:

  • Rub the meat with the oil and then sprinkle liberally with the rub. Put in the refrigerator for at least a half hour and up to 12 hours.
  • Set the EGG for indirect cooking at 275°F/135°C using hickory and cherry smoking wood for flavor. Put the butt in the EGG and cook until the internal temperature is 160°F/71°C;  this should take 6 to 8 hours. Lay out a big double piece of heavy duty aluminum foil and put the pork butt in the middle. As you begin to close up the package pour the apple juice over the top of the butt and then seal the package, taking care not to puncture it put it back in the EGG and cook until the meat reaches an internal temperature of 195°F/91°C;  this should take another 2 to 3 hours.
  • Remove the package from the EGG to a baking sheet. Open the top of the foil to let the steam out and let it rest for ½ hour. Using heavy neoprene gloves or a pair of tongs and a fork transfer the meat to a big pan. It will be very tender and hard to handle. Discard the juices as they will be quite fatty. Shred the meat, discarding the fat and bones; it should just fall apart. Continue to pull the meat until it’s shredded enough to make a sandwich. Add 1 cup of the sauce and mix well. Reserve the additional sauce for serving on the side. Serve on fluffy white buns topped with cole slaw.

*Makes 12 sandwiches

Big Time BBQ Rub Ingredients

  • ½ cup salt
  • ½ cup turbinado sugar
  • ¼ cup granulated brown sugar
  • 1 tablespoon granulated garlic
  • 1 tablespoon granulated onion
  • 2 tablespoons paprika
  • 2 tablespoon chili powder
  • 2 tablespoon freshly ground black pepper
  • 2 teaspoons cayenne
  • 1 tablespoon thyme leaves
  • 1 tablespoon ground cumin
  • 1 teaspoon ground nutmeg

Big Time BBQ Rub Instructions:

From Dr. BBQ’s Big Time Barbecue Cookbook” by Ray Lampe and published by St. Martin’s Press. This is a very good and basic BBQ Rub. It works well on any food for smoking or grilling.

Combine all ingredients, mix well, and store in an airtight container.

*Yields 1½ cups

Dr. BBQ’s Carolina Barbecue Sauce Ingredients

  • 1 c vinegar
  • 2/3 cup catsup
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon Worcestershire
  • ½ teaspoon red pepper flakes

Dr. BBQ’s Carolina Barbecue Sauce Instructions

From The NFL Gameday Cookbook” by Ray “Dr. BBQ” Lampe and published by Chronicle Books.

In a small saucepan mix together the vinegar, catsup, sugar, salt, Worcestershire and pepper flakes. Cook over low heat for 5 minutes stirring to blend.

*Yields about 2 cups

kamado.

The Big Green Egg is based on an Asian design for a clay oven that is more than 3,000 years old, known as the ‘kamado’. In the previous century, American servicemen stationed in Japan tried the tasty, juicy dishes prepared in the characteristic clay pot and took it home with them to the United States to enjoy the delicious food it produced.

Opening its doors in Atlanta, Georgia (USA) in 1974, Big Green Egg made it possible for people across America to purchase this Asian jewel. The company started by importing Japanese and Chinese ‘kamados’. However, over time they developed the perfect model, from ceramic technologies advanced by NASA. Before each Egg leaves the factory, it undergoes a , meticulous inspection. The factory is ISO9001 certified, which means that it satisfies the highest quality standards applying to the industry.

This weekend is the final Second Saturday Stroll in downtown Waynesville for 2015

The lightheartedness plays an important role, creating an environment where men, women and children all find something to enjoy. In contrast, an important aspect of these events is how the town is symbolized as the focus of the event. Part of the joy of being your local Big Green Egg distributor is being able to taste new flavors s and learn about new recipes to enjoy on the Big Green Egg. Here’s a recipe that is sure to be a summertime favorite, beer can chicken on the Big Green Egg!

Beer can chicken on the big green egg

Ingredients:
•1 (4 to 5-pound) chicken
•1 (12-ounce) can beer
•1 cup apple cider
•2 tablespoons olive oil
•2 tablespoons balsamic vinegar

Equipment:
•Porcelain coated grid, 1 (12-ounce) beer can or “Sittin’ Chicken” Ceramic Roaster, 9 by 13-inch Drip Pan,
spray bottle.

Set the EGG for direct cooking with the porcelain coated grid and preheat the EGG to 375ºF.
Apply your favorite rub all over the chicken, even inside the cavity. Work the mixture gently into the skin
and under the skin wherever possible. Cover the chicken and set aside at room temperature for 30 minutes.
Pour half of the beer into the spray bottle. Add the apple cider, olive oil, and vinegar and set aside. If using
the Ceramic Roaster, pour the remaining beer into the cavity of the Roaster and slide the chicken onto the
Roaster, through the tail end. If using the beer can, slide the chicken down over the can.
Place the chicken, still on the Roaster, on the grid and close the lid of the EGG. Cook, using the spray
bottle to baste the chicken once or twice, for 20 minutes, or until the chicken is just beginning to brown all
over. Carefully lift the chicken (still on the Roaster) into the Drip Pan and close the lid of the EGG. Cook,
spraying the chicken with the basting spray several times, for 45 minutes to 1 hour, until the internal
temperature of the thigh reaches 170ºF and the chicken is a mahogany brown color. Using barbecue mitts
remove the chicken and present it on the Roaster to your guests. After they have reacted appropriately,
remove the chicken from the Roaster. Be careful: The can and the liquid inside are very hot.
Spray the chicken once more with the basting spray, cover with foil, and let rest for 10 minutes. Carve and serve.

Serves 4.

Oh, and we almost forgot to mention, May is National Barbecue Month and as a bonus for you, we would like to share one of our favorite recipes we prepare on our Big Green Egg. From our family at Archadeck of West Central & Southwest Ohio to yours, this recipe is one for the file box, as it’s a real crowd pleaser!!

Fire Grilled Steak with Steakhouse butter

Fire Grilled Steak with Steakhouse Butter:

  • Ingredients:

One-half cup butter, softened

Three tbsp finely minced shallot or red onion

One clove of garlic, finely minced

One tbsp finely minced parsley

One tbsp finely minced fresh thyme

Two tbsp of your favorite vinegar

A sprinkle or two of salt and lots of freshly ground pepper

Four thick New York strip loin, sirloin or ribeye steaks

A sprinkle or two of sea salt and freshly ground pepper on each steak

  • Instructions

Stir all the ingredients together until thoroughly combined. Scoop the butter into a large re-sealable bag. Press the butter and form a thick log shape, roughly four inches long. Tightly roll up the bag, shaping the butter into a perfect round log. Refrigerate or freeze for several hours or overnight until the butter is firm enough to slice.

Set the EGG for direct (no convEGGtor) at 600°F/316°C with a Cast Iron Cooking Grid. Just before you begin to cook the steaks, pat them dry and season them heavily with salt and pepper. Position the steaks on the grid at a forty-five angle to the grid lines. After a few minutes, turn them ninety-degrees to get the perfect steakhouse grill marks. Flip and repeat. Continue cooking until the steaks reach the doneness you prefer. You may press the steaks with your finger to gauge doneness; they stiffen as they cook through. This will take some time to master but it’s a skill worth cultivating! Top each steak with a thick slice of steakhouse butter; serve, share and enjoy! Serves four.
