As we move into spring, farmers markets and local gardens will soon be overflowing with fresh vegetables. With this in mind, we have chosen a few meat-free recipes perfect for making the most from the season’s fresh selections.

Zucchini Bread

BGE Zucchini BreadIngredients

  • 3 cups zucchini, shredded
  • 1 ⅔ cups sugar
  • ⅔ cup vegetable oil
  • 2 teaspoons vanilla
  • 4 eggs
  • 3 cups all-purpose flour
  • ½ cup walnuts or pecans
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon ground cloves

Instructions

  • Set your EGG for indirect cooking, with the convEGGtor. Stabilize at 350°F/177°C.
  • Grease the bottoms of 2 loaf pans. Mix the zucchini, sugar, oil, vanilla, and eggs in a bowl. Stir in remaining ingredients. Pour into loaf pans.
  • Cook 45 minutes-1 hour.

Indian Curry Summer Vegetable Pan Grill

Ingredients

  • 1⁄4 cup water
  • 2 cups broccoli cut into bite size pieces
  • 1 cup red onion cut into thin 1” strips
  • 1 red bell pepper cut into thin 1” strips
  • 1 1⁄2 cups yellow squash cut in 1⁄2” slices
  • 1⁄4 cup sweetened coconut milk
  • 1 tablespoon Bouillon Seasoned Vegetable Base
  • 1⁄2 teaspoon curry powder
  • 1⁄4 teaspoon black pepper, ground

Instructions

  • Set EGG for direct cooking (no convEGGtor) at 400°F/204°C.
  • In a bowl, mix coconut milk, Seasoned Vegetable Base, curry powder and black pepper.
  • Combine vegetables in a Stir-Fry and Paella Pan.
  • Pour mixture over vegetables and place pan directly on EGG.
  • Cook for 10-12 minutes or until vegetables are soft and fork-tender.

Serves 4

During festival hours we met some really wonderful people, consulted with potential clients and shared some great eats prepared on the Big Green Egg! With this in mind, the highlight from the event was undoubtedly the zucchini bread! Believe or not, we have received many requests for the recipe.

As part of our commitment to bringing our customers only the best, we have put together the recipe for you to create your own Big Green Egg zucchini bread right at home! This also a great way to use up the loads of zucchini you may have from your late summer garden.

Big Green Egg Zucchini Bread

  • zucchini-bread3 cups flour
  • 1 tablespoon cinnamon
  • 1 ½ teaspoons baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • 3 eggs
  • ¾ cup apple sauce (or for less healthy option, veg oil of your choice)
  • ½ cup honey
  • 1 teaspoon vanilla
  • 3 cups grated zucchini

Mix up wet and dry ingredients into batter and pour batter into loaf pans. Set the Egg for 325 and bake until a toothpick inserted into middle comes out clean —about 45 minutes. Enjoy!

The 47th annual Ohio Sauerkraut Festival is this weekend — don’t miss it!

sauerkraut2016finalArchadeck Outdoor Living is excited to announce our participation in a beloved annual event that has been a cherished part of Waynesville for 47 years —  the Ohio Sauerkraut Festival.  This year promises more than just sauerkraut, with over 450 vendors  participating. Archadeck of West Central & Southwest Ohio will also be participating and our talented design team will be on hand to discuss your outdoor living aspirations and to demonstrate the culinary wonders possible with a Big Green Egg!

sauerkraut-festival-2016The history of the festival began in 1970 after a group of Waynesville’s retail merchants began planning a sideewalk sale and it was suggested that a sauerkraut dinner be part of the event.  With this decision, the Ohio Sauerkraut Festival was born! The first festival took place on October 3rd, 1970 where 538 pounds of the “sauer” stuff was served to around 1500 attendees. Over the years, word quickly spread of the delicious food, unique crafts and lively entertainment. Today, festival serves 7 tons of sauerkraut and attracts approximately 350,000 visitors each year to browse among the over 450 craft booths and sample the offerings from more than 30 different food booths. It continues to be one of the top quality festivals in the United States, attracting visitors and vendors from every state across the Nation. Vendors come from as far as Hawaii, Florida and California to participate in the festival.

The festival is a top-ranked event in Ohio and features an eclectic mix of arts, crafts, antiques, food and outdoor living! You scream, we scream, we all scream for ice cream treats created using the Big Green Egg!

In honor of July being National Ice Cream Month, we thought it only proper to spread the sweetness by sharing some of our favorite Big Green Egg ice cream treat recipesIn honor of July being National Ice Cream Month, we thought it only proper to spread the sweetness by sharing some of our favorite Big Green Egg ice cream treat recipes! In case you weren’t aware that there is a whole month set aside to celebrate this delectable, double-dipping goodness, here is a little history courtesy of the International Dairy Food Association website:

In 1984, President Ronald Reagan designated July as National Ice Cream Month and the third Sunday of the month as National Ice Cream Day. He recognized ice cream as a fun and nutritious food that is enjoyed by over 90 percent of the nation’s population. In the proclamation, President Reagan called for all people of the United States to observe these events with “appropriate ceremonies and activities.”

About 10.3 percent of all the milk produced by U.S. dairy farmers is used to produce ice cream, contributing significantly to the economic well-being of the nation’s dairy industry. With this in mind, Archadeck of West Central & Southwest Ohio is sharing some of our favorite ice cream recipes created by the Big Green Egg.  All of these and more recipes can be found on the Big Green Egg website and Archadeck of West Central & Southwest Ohio is your local dealer for the Big Green Egg and Eggcessories.

Homemade Ice Cream Sandwiches

Homemade Ice Cream Sandwiches

This is a great way to beat the heat while cooking on the EGG. Mix and match your favorite flavors of ice cream with your favorite type of cookie!

Ingredients

  • Your favorite cookie dough
  • Your favorite ice cream
  • Perforated Cooking Grid
  • Aluminum foil
  • Baking Stone

Instructions

  • Set the EGG for indirect cooking (with convEGGtor) at 350°F/177°C, unless otherwise specified by the cookie dough recipe. Preheat a Baking Stone on the grid of the EGG.
  • Make cookie dough as directed.
  • Wrap Perforated Cooking Grid with aluminum foil to prevent cookies from dripping through perforation. Evenly space cookie dough around the Perforated Cooking Grid.
  • Make 4 small balls with aluminum foil. Place 4 balls of foil evenly spaced on Baking Stone and place Perforated Cooking Grid on top of the foil. This allows for proper air circulation so the cookies bake evenly. It isn’t necessary, but is helpful.
  • Allow to bake for 9-11 minutes, unless otherwise specified by the cookie dough recipe.
  • Remove cookies once fully baked and allow to cool. Pair up cookies in sets of two based on relative size. Scoop your favorite type of ice cream onto one cookie and sandwich it with the other.
  • Eat immediately.

Ingredients

  • 8 Large Marshmallows
  • 8 Peanut Butter Cookies
  • 2 Cups Vanilla Ice Cream
  • 4 Wickles Pickles Slices

Instructions

  • Set EGG for indirect cooking (with convEGGtor) at 325°F/163°C.
  • Grill banana slices directly on the EGG for 1 minute to get slight grill marks. Transfer to aluminum foil and add marshmallows. Cook for an additional minute, or until the marshmallows begin to melt. Remove and stack between 2 Peanut Butter Cookies and top with 1⁄2 cup vanilla ice cream. Garnished with a Wickles Pickle Slice.
  • Makes 4 servings

A New Spin on Ice Cream Sandwiches

These Cranberry & White Chocolate Oatmeal Cookie Ice Cream Sandwiches are the perfect combination of warm cookies from the EGG and cold ice cream for a tasty treat on a hot summer night! Recipe adapted from Canadian Lentils. For more information, visit lentils.ca.

Ingredients

  • ¼ cup (60 ml) dry red lentils
  • ½ cup (125 ml) butter, at room temperature
  • ½ cup (125 ml) packed brown sugar
  • ½ cup (125 ml) sugar
  • 1 large egg
  • 1 tsp (5 ml) vanilla
  • 1½ cups (375 ml) all-purpose flour
  • 1 cup (250 ml) old-fashioned or quick-cooking oats
  • 1 tsp (5 ml) baking soda
  • ¼ tsp (1 ml) salt
  • ½ cup (125 ml) dried cranberries
  • 1 cup (250 ml) white chocolate chunks or chips
  • 4 cups (1 L) vanilla ice cream

Instructions

  • Set the EGG for indirect cooking at 350°F/177°C.
  • In a small saucepan of boiling water, cook the lentils for 15-20 minutes, until soft. Drain well and set aside.
  • In a large bowl, beat the butter and sugars for 2-3 minutes, until pale and fluffy. Beat in the egg and vanilla. In a medium bowl, stir together the flour, oats, baking soda, and salt; add to the butter mixture along with the cooked lentils and stir until almost combined; add the cranberries and white chocolate and stir just until blended.
  • Drop large spoonfuls of dough a couple of inches apart on a greased baking sheet; bake on the EGG for 12-15 minutes, until pale golden around the edges and just set. Transfer to a wire rack to cool completely, and if you have time, freeze them (this will make them more firm, and easier to spread with ice cream).
  • Remove the ice cream from the freezer and set on the countertop until slightly softened. Place a scoop of ice cream on the underside of a frozen cookie, top with a second cookie and press down so that the ice cream spreads to the edges. Place on a baking sheet and return to the freezer until frozen. Wrap in plastic wrap and return to the freezer until you are ready to serve them.
  • Makes 1 dozen sandwiches or 2 dozen cookies

The lightheartedness plays an important role, creating an environment where men, women and children all find something to enjoy.

Similar to the celebratory tone of national holidays, small-town festivals provide opportunities to define and redefine the community. Additionally, festivals also serve as excellent opportunities for new residents to get acclimated and meet lots of neighbors make new friends all while increasing the interest of visitors from out of town that may soon become residents.  In essence, locals and out-of-towners alike are typically treated to an authentic, high-quality experience that they will carry with them for a long time.

Texas-Style Brisket

TExas Brisket

This brisket is wonderful alone or served with soft tortillas and taco toppings.

Ingredients:

  • One 10 to 12 lb (4.5 to 5.5 kg) whole packer brisket (Choice or higher)

Instructions:

  • Trim the excess fat and silver skin from the brisket. Also, remove any “hard” pieces of fat as they will not render off during the cooking process. Trim the fat off the bottom of the brisket leaving only ¼ in (6 mm) fat. Apply rub to all sides of the meat liberally … I mean liberally! Cover the brisket and place in the refrigerator to marinate overnight.
  • Mix the rub ingredients (listed below) in a large bowl. This mix will make more than you need for one brisket; store the remainder in an airtight container.
  • Set your EGG for indirect cooking with the convEGGtor at 250°F/121°C.
  • Place the brisket on the grid, fat-side down – this is my preference, but highly debated in the barbecue world. Fat-side up is fine if that is your preference, but fat down is what many competitors do as it gives you a much better presentation. When the meat reaches an internal temperature of 160°F/71°C, double wrap the brisket in non-waxed butcher paper or aluminum foil – this is what we call the Texas crutch. The bark will have formed nicely by this point.
  • Continue to smoke the brisket until the meat is “probe tender,” which means when you probe it there is no resistance … think of a toothpick in a cake. Each piece of meat is different but this will likely be at an internal temperature of between 200-202°F/93-94°C. Remove the brisket from the EGG, wrap in a towel and place in a cooler for at least one hour. This will allow the juices to re-distribute in the meat. Unwrap the brisket and slice against the grain.

Brisket Rub Ingredients

  • 1 cup (240 ml) coarsely ground pepper
  • 1 cup (240 ml) non-iodized salt
  • ¼ cup (60 ml) granulated garlic
  • ¼ cup (60 ml) onion powder
  • ¼ cup (60 ml) paprika

Ingredients:

  • One 7 to 8 pound pork butt, fat cap trimmed off
  • 2 tablespoons vegetable oil
  • Big Time BBQ Rub (Recipe below)
  • ½ cup apple juice
  • 2 cups Dr. BBQ’s Carolina Barbecue sauce (Recipe below)
  • 12 hamburger buns

Instructions:

  • Rub the meat with the oil and then sprinkle liberally with the rub. Put in the refrigerator for at least a half hour and up to 12 hours.
  • Set the EGG for indirect cooking at 275°F/135°C using hickory and cherry smoking wood for flavor. Put the butt in the EGG and cook until the internal temperature is 160°F/71°C;  this should take 6 to 8 hours. Lay out a big double piece of heavy duty aluminum foil and put the pork butt in the middle. As you begin to close up the package pour the apple juice over the top of the butt and then seal the package, taking care not to puncture it put it back in the EGG and cook until the meat reaches an internal temperature of 195°F/91°C;  this should take another 2 to 3 hours.
  • Remove the package from the EGG to a baking sheet. Open the top of the foil to let the steam out and let it rest for ½ hour. Using heavy neoprene gloves or a pair of tongs and a fork transfer the meat to a big pan. It will be very tender and hard to handle. Discard the juices as they will be quite fatty. Shred the meat, discarding the fat and bones; it should just fall apart. Continue to pull the meat until it’s shredded enough to make a sandwich. Add 1 cup of the sauce and mix well. Reserve the additional sauce for serving on the side. Serve on fluffy white buns topped with cole slaw.

*Makes 12 sandwiches

Big Time BBQ Rub Ingredients

  • ½ cup salt
  • ½ cup turbinado sugar
  • ¼ cup granulated brown sugar
  • 1 tablespoon granulated garlic
  • 1 tablespoon granulated onion
  • 2 tablespoons paprika
  • 2 tablespoon chili powder
  • 2 tablespoon freshly ground black pepper
  • 2 teaspoons cayenne
  • 1 tablespoon thyme leaves
  • 1 tablespoon ground cumin
  • 1 teaspoon ground nutmeg

Big Time BBQ Rub Instructions:

From Dr. BBQ’s Big Time Barbecue Cookbook” by Ray Lampe and published by St. Martin’s Press. This is a very good and basic BBQ Rub. It works well on any food for smoking or grilling.

Combine all ingredients, mix well, and store in an airtight container.

*Yields 1½ cups

Dr. BBQ’s Carolina Barbecue Sauce Ingredients

  • 1 c vinegar
  • 2/3 cup catsup
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon Worcestershire
  • ½ teaspoon red pepper flakes

Dr. BBQ’s Carolina Barbecue Sauce Instructions

From The NFL Gameday Cookbook” by Ray “Dr. BBQ” Lampe and published by Chronicle Books.

In a small saucepan mix together the vinegar, catsup, sugar, salt, Worcestershire and pepper flakes. Cook over low heat for 5 minutes stirring to blend.

*Yields about 2 cups
