During festival hours we met some really wonderful people, consulted with potential clients and shared some great eats prepared on the Big Green Egg! With this in mind, the highlight from the event was undoubtedly the zucchini bread! Believe or not, we have received many requests for the recipe.
As part of our commitment to bringing our customers only the best, we have put together the recipe for you to create your own Big Green Egg zucchini bread right at home! This also a great way to use up the loads of zucchini you may have from your late summer garden.
Big Green Egg Zucchini Bread
- 3 cups flour
- 1 tablespoon cinnamon
- 1 ½ teaspoons baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
- 3 eggs
- ¾ cup apple sauce (or for less healthy option, veg oil of your choice)
- ½ cup honey
- 1 teaspoon vanilla
- 3 cups grated zucchini
Mix up wet and dry ingredients into batter and pour batter into loaf pans. Set the Egg for 325 and bake until a toothpick inserted into middle comes out clean —about 45 minutes. Enjoy!
